各大酒造都各出奇謀去增加銷量,拓展海外市場固然之。另一個開拓的市場,便是一班飲酒,但不飲或很少飲清酒 (如葡萄酒、威士忌)的消費者;還有是年青人市場,不少年青人把清酒當成”老餅”看待。加上近年酒造由新一代接手,不少在東京讀書或工作,有些甚至有出國經驗,在這兩大原因下,清酒都推陳出新,當中Sparkling Sake氣泡清酒,近年在酒造大力推廣下,開始大行其道。
第一支氣泡清酒在1998年面世,由來自宮城縣一ノ蔵釀造的”すず音發泡清酒”。面世只有廿多年氣泡清酒,仍然在發展中,在釀造方面並沒有特別規限。在前段如精米、製麴及酒母等,釀造方法跟一般清酒無異,但如入加入氣泡,大致兩種方法。
