After several costly mishaps, one group of pilots came up with the idea to create a checklist before taxiing down the runway, creating a much safer way to fly. It was after this airplane crash that the pre-flight checklist was introduced and adopted as a permanent, mandatory tool for pilots. Today, the checklist is not only used for aviation safety, but it has also been implemented in a variety of other industries and workplaces. Checklists not only keep you organized because it's a visual reminder of what needs to be done...it brings a sense of accomplishments when you check everything off!

The history of first responders in the US dates back to the Civil War, when field workers would provide needed, on-site care to wounded soldiers. But this idea dates even further back to Europe, during the Napoleonic Wars, where lightweight wagons delivered the wounded to field hospitals. there is a difference between an emt and a paramedic...Candidates learn life support techniques in first-response situations, including CPR, tourniquet application, and treatment of wounds. Paramedics deliver more advanced procedures and therefore require more extensive education and training. Professional training today can take anywhere from one to three years.

goodbye/fun facts....National Breadstick Day...Breadsticks are slender sticks of baked crispy dry goodness invented in Italy. Aside from their crunch, the best thing about the humble breadstick is they can be eaten as an appetizer or you can dress them up with all manner of culinary embellishments. The original breadsticks, known as grissini, would have been hard and crunchy, with a texture and flavor that is more like a cracker. one of the origin stories is that these delicious little sticks of bread got their start in the 17th century in the region of Northern Italy, just outside of the town of Turin. the other origin story says they were created as an intestinal disorder remedy that encouraged the appetite of the nine-year-old duke, Vittorio of the House of Savoy — eventually saving his life. Vittorio recovered and eventually became a king. The crisp grissino became the preferred bread in the Savoia household...and then all over Italy, then europe then made their way to America.

B-o-l-o-g-n-a is actually named after the Italian city of the same name, but there they call it mortadella, which is a sausage with bits of lard and peppercorns in it. American Bologna, as you may have noticed, is distinctly different, but no less loved the world over. During the Great Depression, bologna was one of the most accessible foods to Americans. It was affordable and it kept well for long periods of time. and it's so versatile... It can be fried and thrown on toasted bread with pickles, onions, tomatoes, and lettuce. It can be served cold with thick slices of cheddar and white bread. It can be chopped up and mixed with crumbled, hard boiled eggs, mayo, and veggies for a bologna salad. Bologna can be made from any number of meats, including beef, turkey, venison, chicken, and even a vegetarian soy protein.

It’s a cake with an identity crisis! when the Boston cream pie was first invented, cakes and pies were baked with the same kinds of pans, and most bakers at the time even used the words pie and cake interchangeably....It all started back in 1856 at the Parker House Hotel in Boston. (which is now the omni parker house) A clever chef thought, “What would happen if I put custard between cake layers and top it with chocolate?” And just like that, the Boston Cream Pie was born. The recipe is so simple —bake 2 yellow cakes, put custard in between the layers...and top with a chocolate ganache. you can even make them as a trifle cake or eclairs or cupcakes.
