En el Siglo XV y XVI en la época del Virrey Toledo se cambió el nombre de Chicherías a Jayaris y luego a picanterías. En Arequipa se comía cuatro veces al día, donde se preparaban los jayaris esa ha sido una costumbre que se ha ido perdiendo con el pasar de los años, pero también ha habido muchas innovaciones.
Lo que se quiere es respetar el legado que han dejado las picanteras de antaño.
