On a recipe page she will list substitute ingredients for common things that people can't eat or don't like to eat. The beginning of the book before recipes start is also informative!

The tables and charts are visually appealing. For those just beginning a kitchen library, I would suggest starting with this book. It provides a thorough and appetizing education.

Also, Leanne's particular information about how she has tweaked the diet for herself and for others with certain health issues, is very helpful and tuned in. We highly recommend this cookbook. We have not found anything better.

Everybody and every body is different and it takes a bit of experimentation to figure out what combination of these techniques (if any) are right for you. Take your time and have a good time with it. I hope this was helpful. I'm sorry it was so long.
