Publisher's summary
In this eye-opening expose, acclaimed health journalist and National Geographic contributor Maryn McKenna documents how antibiotics transformed chicken from local delicacy to industrial commodity - and human health threat - uncovering the ways we can make America's favorite meat safer again.
What you eat matters - for your health, for the environment, and for future generations. In this riveting investigative narrative, McKenna dives deep into the world of modern agriculture by way of chicken: from the farm where it's raised directly to your dinner table. Consumed more than any other meat in the United States, chicken is emblematic of today's mass food-processing practices and their profound influence on our lives and health. Tracing its meteoric rise from scarce treat to ubiquitous global commodity, McKenna reveals the astounding role of antibiotics in industrial farming, documenting how and why "wonder drugs" revolutionized the way the world eats - and not necessarily for the better. Rich with scientific, historical, and cultural insights, this spellbinding cautionary tale shines a light on one of America's favorite foods - and teaches us the way to safer, healthier eating for ourselves and our children.

Story
Have you ever desired, deep within your soul, to make a comfortable full-time living from a farming enterprise? Too often people dare not even vocalize this desire because it seems absurd. It's like thinking the unthinkable. After all, the farm population is dwindling. It takes too much capital to start. The pay is too low. The working conditions are dusty, smelly and noisy: Not the place to raise a family. This is all true, and more, for most farmers.

Story
By the late 19th century, Americans rich and poor had come to expect high-quality fresh beef with almost every meal. Beef production in the United States had gone from small-scale, localized operations to a highly centralized industry spanning the country, with cattle bred on ranches in the rural West, slaughtered in Chicago, and consumed in the nation’s rapidly growing cities. Red Meat Republic tells the remarkable story of the violent conflict over who would reap the benefits of this new industry and who would bear its heavy costs.

In the 19th century, American meals were about subsistence, not enjoyment. But as a new century approached, appetites broadened, and David Fairchild, a young botanist with an insatiable lust to explore and experience the world, set out in search of foods that would enrich the American farmer and enchant the American eater. Kale from Croatia, mangoes from India, and hops from Bavaria. Peaches from China, avocados from Chile, and pomegranates from Malta. But Fairchild's finds weren't just limited to food.

Story
The emergence of strange new diseases is a frightening problem that seems to be getting worse. In this age of speedy travel, it threatens a worldwide pandemic. We hear news reports of Ebola, SARS, AIDS, and something called Hendra killing horses and people in Australia - but those reports miss the big truth that such phenomena are part of a single pattern. The bugs that transmit these diseases share one thing: they originate in wild animals and pass to humans by a process called spillover. David Quammen tracks this subject around the world.

Story
Raised as a fourth-generation farmer, when Will Harris inherited White Oak Pastures he was a full-time commodity cowboy who played hard and fast with every tool the system offered–chemicals, antibiotics, steroids, and more. His ancestors had built a highly profitable, conventionally run machine, but over time he found himself disgusted with the excess, cruelty, and smalltown devastation this system entailed. So he bet the farm on forging a different way of doing things. One that works with nature not against it, and bridges the quickly widening delta between consumers and their food.

"What should we have for dinner?" To one degree or another, this simple question assails any creature faced with a wide choice of things to eat. Anthropologists call it the omnivore's dilemma. Choosing from among the countless potential foods nature offers, humans have had to learn what is safe, and what isn't. Today, as America confronts what can only be described as a national eating disorder, the omnivore's dilemma has returned with an atavistic vengeance.

Every time we eat, we have the power to radically transform the world we live in. Our choices can help alleviate the most pressing issues we face today: the climate crisis, infectious and chronic diseases, human exploitation and, of course, non-human exploitation. Critic reviews
"In this well-written exposé, McKenna (Superbug) dissects the controversy of the routine use of antibiotics to fatten chicken, which has led to the rise of drug-resistant bacteria.... Throughout, McKenna offers spot-on commentary on the dangerous additives in chickens and concludes on a relatively hopeful note." (Publishers Weekly)

Through human stories and cutting-edge science, Walters explores the origins of seven diseases: Mad Cow Disease, HIV/AIDS, Salmonella DT104, Lyme Disease, Hantavirus, West Nile, and new strains of flu. He shows that they originate from manipulation of the environment, from emitting carbon and clear-cutting forests to feeding naturally herbivorous cows “recycled animal protein.”

But behind it all, there is an even more fundamental driver: Food. In Animal, Vegetable, Junk, trusted food authority Mark Bittman offers a panoramic view of how the frenzy for food has driven human history to some of its most catastrophic moments.

As historian Mark Essig reveals in Lesser Beasts, swine have such a bad reputation for precisely the same reasons they are so valuable as a source of food: they are intelligent, self-sufficient, and omnivorous. What's more, he argues, we ignore our historic partnership with these astonishing animals at our peril.

Story
After 1991, international organizations from the Red Cross to Greenpeace sought to help the victims, yet found themselves stymied by post-Soviet political circumstances they did not understand. International diplomats and scientists allied to the nuclear industry evaded or denied the fact of a wide-scale public health disaster caused by radiation exposure. Efforts to spin the story about Chernobyl were largely successful; the official death toll ranges between 31 and 54 people. In reality, radiation exposure from the disaster caused between 35,000 and 150,000 deaths in Ukraine alone.

Story
In recent years, malaria has emerged as a cause célèbre for voguish philanthropists. Bill Gates, Bono, and Laura Bush are only a few of the personalities who have lent their names - and opened their pocketbooks - in hopes of curing the disease. Still, in a time when every emergent disease inspires waves of panic, why aren’t we doing more to eradicate one of our oldest foes? And how does a parasitic disease that we’ve known how to prevent for more than a century still infect 500 million people every year, killing nearly 1 million of them?

Story
Many people will remember that Rachel Carson predicted a silent spring, but she also warned of a fruitless fall, a time with no pollination and no fruit. The fruitless fall nearly became a reality when, in 2007, beekeepers watched 30 billion bees mysteriously die. And they continue to disappear. The remaining pollinators, essential to the cultivation of a third of American crops, are now trucked across the country and flown around the world, pushing them ever closer to collapse.

Xe Sands is a great narrator!
Good book, delightful listen! Book was well researched and didn’t try to push the agricultural agenda one way or the other. Successful farms were profiled and I don’t think the author out any excessive embellishments on the narrative (as so happens in writing about rural America and agriculture in general).

Much more interesting than I thought it would be. A few political figures applauded I disagree about. And one observation about the climate that diminished an otherwise very well presented topic.

Somehow the author keeps this book completely entertaining while dropping important facts into every story. This is a story that will forever open your eyes to how far greed has gone to poison our food supply.

best book on food i have listened to ever
This is great and explains pandemics can actually have more to do with the way we raise and treat animals with cruel conditions we force them to live. They are crowded and sick and vaccines and antibiotics to artificially make them live in cruel conditions has resulted in super bacteria that crosses over to humans.
I think this could also be applied to viruses crossing over with excessive vaccine use. Basically, we can’t compete with nature: plants and probiotics evolve at the same rate as super bacteria and viruses, and companies can’t patent or compete with nature fast enough. Let’s respect our earth and work with it instead of against it. And China happens to uses the most antibiotics and probably vaccines now on meat.. maybe covid was a result of the meat industry, not created in a super lab but studied in a lab as it already existed in the animals. We are all connected weather we want to believe it or now. Great read, entertaining and informative.
