Happy I listened.

Normally I don't like books that lean hard into personal accounts when discussing scientific topics but this book balances short but apt personal stories with information well. The reader, who is also the author, imbues the book with an infectious interest that keeps the science from being boring and difficult to follow. The science is less about the chemical breakdowns and more about how slight changes in variables; time, temperature, and ingredients can change the flavors drastically. The book also covers history briefly to explain the reasons behind names, processes, ingredients, certifications, designations, and significance.

The accompanying PDF has recipes, lists, and illustrated instructions for dishes and a couple fermentation projects.

Simply amazing

I loved every moment of this audio book, as Katie's quirky YouTube videos her book is full of energy and hunger for life. can't wait to try all the recipes in the book.
