This is a great book for new (or established) Sous Chefs, Executive Chefs, and aspiring cooks who might be interested understanding the inner workings of a restaurant kitchen as well as how to “think like an Executive Chef”.

Andre Natera addresses so many questions that many Chefs have, but may be too embarrassed to ask or might not have the right Chef to ask.

I very thoroughly enjoyed the set up of the read, the back and forth between the head chef and his Lead cook. learning from his mentor on how he has the ability to move on and be a Chef himself. the questions, the doubt, and the inevitable happens to come. how to just roll with it all and not miss sight of what your goal is. 🤌🏼
